Cream puff pie, also known as cream pie with pate a choux crust, is a dessert made by filling a crust, typically made from shortcrust pastry or pate a choux, with cream pie filling. The crust is made from ingredients such as all-purpose flour, butter, sugar, and eggs, while the filling is made from milk, sugar, eggs, cornstarch, and other ingredients. After filling the crust with the cream, whipped cream or a mixture of cream pie filling and whipped cream, called “shoe cream,” is often added on top to finish it off.
Thanks to the combination of a soft cream and a crispy crust, cream puff pie has a unique flavor and texture, and it’s a popular dessert that can be customized with a variety of ingredients.

Custard cream pie Ingredients:

  • For the crust:
    • 1/2 cup water
    • 1/4 cup unsalted butter
    • 1/8 tsp salt
    • 1/2 cup all-purpose flour
    • 2 large eggs
  • For the filling:
    • 2 cups milk
    • 1/2 cup granulated sugar
    • 1/4 cup cornstarch
    • 3 large egg yolks
    • 1 tsp vanilla extract
    • 1 cup heavy cream
    • Powdered sugar for dusting

Custard cream pie Cooking procedure:

  1. Preheat oven to 375°F (190°C).
  2. To make the crust, combine water, butter, and salt in a medium saucepan and heat over medium heat until butter is melted.
  3. Add flour and stir with a wooden spoon until mixture forms a ball.
  4. Remove from heat and let cool for a few minutes.
  5. Add eggs, one at a time, stirring until mixture is smooth.
  6. Pour mixture into a 9-inch (23cm) pie dish and spread evenly.
  7. Bake for 30-35 minutes, or until crust is golden brown and puffed up.
  8. Remove from oven and let cool completely.
  9. To make the filling, whisk together milk, sugar, cornstarch, and egg yolks in a medium saucepan.
  10. Heat over medium heat, stirring constantly, until mixture thickens and comes to a boil.
  11. Remove from heat and stir in vanilla extract.
  12. Let cool for 10 minutes, then pour into the cooled pie crust.
  13. In a large bowl, whip heavy cream until stiff peaks form.
  14. Spread whipped cream over the top of the filling.
  15. Refrigerate for at least 2 hours before serving.
  16. Dust with powdered sugar before serving.
