Chocolate Tiramisu Recipe and Tips

Ingredients:

  • 6 ounces (170g) dark chocolate, finely chopped
  • 4 large eggs, separated
  • 1/2 cup granulated sugar
  • 1 cup heavy cream
  • 8 ounces (227g) mascarpone cheese
  • 1 cup strong brewed coffee or espresso, cooled
  • 24 ladyfingers
  • Cocoa powder, for dusting

Instructions:

  1. Melt the dark chocolate in a heatproof bowl set over a pan of simmering water. Stir until smooth, then remove from heat and let it cool slightly.
  2. In a large mixing bowl, beat the egg yolks and sugar together until thick and pale.
  3. In a separate bowl, whip the heavy cream until soft peaks form.
  4. In another bowl, beat the mascarpone cheese until smooth.
  5. Gradually fold the melted chocolate into the mascarpone cheese.
  6. Gently fold the whipped cream into the mascarpone-chocolate mixture until well combined.
  7. In a separate bowl, beat the egg whites until stiff peaks form. Fold them into the mascarpone mixture.
  8. Dip each ladyfinger into the coffee or espresso, making sure not to soak them for too long. Arrange half of the soaked ladyfingers in a single layer in the bottom of a serving dish.
  9. Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of soaked ladyfingers and the remaining mascarpone mixture.
  10. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld together.
  11. Before serving, dust the top of the tiramisu with cocoa powder.

Tips:

  • Use high-quality dark chocolate for the best flavor.
  • Make sure the coffee or espresso is cooled before dipping the ladyfingers to prevent them from becoming too soggy.
  • Allow the tiramisu to chill in the refrigerator for at least 4 hours to achieve the best texture and flavor.
  • Dust the cocoa powder over the tiramisu just before serving to keep it looking fresh.
