  • 1 1/4 cups heavy cream
  • 1/2 teaspoon vanilla extract
  • 8 ounces mascarpone cheese

  • 2 tablespoons rum (optional)
  • 24 ladyfinger cookies
  • Cocoa powder, for dusting

Instructions:

  1. In a heatproof bowl, whisk together the egg yolks and sugar until well combined.
  2. Place the bowl over a saucepan of simmering water, making sure the bottom of the bowl doesn’t touch the water.
  3. Cook the mixture, whisking constantly, for about 8-10 minutes or until it thickens and becomes pale yellow in color.
  4. Remove the bowl from the heat and let it cool for a few minutes.
  5. In a separate bowl, whip the heavy cream and vanilla extract until soft peaks form.
