- 1 1/4 cups heavy cream
- 1/2 teaspoon vanilla extract
- 8 ounces mascarpone cheese
- 1 cup strong brewed coffee, cooled
- 2 tablespoons rum (optional)
- 24 ladyfinger cookies
- Unsweetened cocoa powder, for dusting

- In a heatproof bowl, whisk together the egg yolks and sugar until well combined and creamy.
- Place the bowl over a saucepan of simmering water, making sure the bottom of the bowl does not touch the water. Continue whisking the egg yolk mixture for about 4-5 minutes, or until it thickens and reaches a light yellow color.
- Remove the bowl from the heat and whisk in the milk. Let it cool to room temperature.
- In a separate bowl, whip the heavy cream and vanilla extract until stiff peaks form.
