  • 4 large eggs, separated
  • 1/2 cup granulated sugar
  • 1 cup heavy cream
  • 8 ounces (227g) mascarpone cheese
  • 1 cup strong brewed coffee or espresso, cooled
  • 24 ladyfingers
  • Cocoa powder, for dusting


  1. Melt the dark chocolate in a heatproof bowl set over a pan of simmering water. Stir until smooth, then remove from heat and let it cool slightly.
  2. In a large mixing bowl, beat the egg yolks and sugar together until thick and pale.
  3. In a separate bowl, whip the heavy cream until soft peaks form.
